Dentures without Roof Plate: I am looking for snap in dentures that don't have the plastic that covers the roof of my mouth.

What you are asking for is a palateless denture. Yes these do exist; but it is contingent upon whether you have enough bone to place four implants.
The bone must be adequate enough to receive a regular size implant and withstand the forces applied to them. Short narrow implants would not be sufficient.
If you do not have enough bone, then bone grafting is an option. The denture can be screw retained or can be removed using various snap or attachment appliances.
